Saturday Morning Breakfast Sandwich

I’m all for setting thoughtful themes and resolutions for the year, but I think it’s also important to have a few goals that learn toward the whimsical side of life, too. That’s why this year, along with tackling my morning and bedtime routines and cleaning out my closets, I’m also reading children’s literature and trying to eat more brunch.

I love brunch! I’ve gone out for brunch with friends more than usual this year - I even had a birthday book brunch! - and I’ve also been trying to try new recipes to enjoy more brunch dates at home.

One Saturday morning we didn’t have many groceries in the house that seemed to come together for an actual meal. Using extras I found in the pantry and the fridge, I discovered a new at home Saturday morning brunch favorite.

For this easy breakfast sandwich for one, you’ll need:

  • 1 english muffin
  • 1 wedge laughing cow spreadable Swiss cheese
  • 2 tbsp pizza sauce
  • 2 tbsp shredded cheddar cheese
  • 2 slices ham
  • 1 egg

Fry your egg over medium heat. When you flip your egg, add the ham to the frying pan and the cheddar cheese to the top of the egg to melt. Slice the english muffin in half and toast it. When your muffin is toasted to your liking, spread the Swiss cheese evenly on each half. Spread the pizza sauce over the bottom half. Add the fried egg, top with ham and the top half of your english muffin. Serve with coffee, and enjoy!


I’ve made this sandwich for both brunch and dinner at least twice a week for the last month or so. I like this sandwich because it’s super customizable. I like to add spinach, onions and avocado.

Eating more brunch this year has me trying new recipes and making plans with friends more often. I think this is a habit I can stick to for years to come.
